This May, Copenhagen becomes the epicenter of culinary innovation and inspiration as the MAD Symposium returns for its seventh edition-MAD 7. Founded by René Redzepi, the visionary chef behind restaurant noma, the MAD Symposium has, since 2011, gathered the brightest minds in food to challenge, inspire, and transform the global hospitality industry. The overarching theme of MAD 7 is Build to Last, a call to action for everyone in hospitality to think beyond trends and focus on creating enduring change. MAD Camp’s own theme, Make it Matter, invites students to explore how their careers can have a real impact-on the food system, the climate, and society at large. MAD 7 is more than a conference-it’s a movement. By focusing on sustainability, leadership, and the next generation, Copenhagen’s MAD Symposium continues to lead the way in reimagining what the future of food can-and should-be.
The full list of notable speakers at MAD 7 in Copenhagen has not been officially published. However, it is confirmed that René Redzepi, chef of noma and founder of MAD, is a central figure at the event and features prominently in the MAD Talks podcast series leading up to MAD 7. In addition, Rosio Sanchez, chef-owner of Sanchez and Hija de Sanchez in Copenhagen, is highlighted as a participant sharing her experiences from previous symposia, suggesting her involvement at MAD 7 as well. For the latest updates and a full list of speakers, it is recommended to follow MAD’s official channels and newsletters
This year’s MAD 7 introduces an exciting new initiative: MAD Camp, a one-day festival designed specifically for Danish culinary and hospitality students. Held on Refshaleøen, MAD Camp brings together 200 local students for a day of talks, workshops, and shared meals with leading voices from Denmark and beyond. The goal? To empower the next generation with the tools, connections, and inspiration to shape a more sustainable and meaningful future for food. MAD 7 and MAD Camp aren’t just about listening to talks; they’re about forging connections. Over shared meals and conversations, students meet role models who can open doors and broaden horizons. As René Redzepi puts it, “We want to pass that experience on-a day where students meet our industry’s most inspiring voices and gain new perspectives on their future”
