After 20 years of developing thousands of dishes, the number one restaurant in the world Noma opened their kichen pantry to share the best of what they’ve learned along the way.
On March 1 Noma releases it’s first consumer product: the Smoked Mushroom Garum. It is the first of a series of future pantry products that they hope will do the same for us as it has done for them: help inspire and create greener, more delicious meals at home.

About Noma’s garum: Noma takes on an ancient culinary tradition of umami-rich fermented sauces and their garums have been the key to their success for Noma’s vegetarian and vegan menus. After two decades of research and development, we are opening the Noma pantry to share some of the best of what we’ve learned along the way.
Project 001 starts with a complex garum, the first in a series of pantry products that reflects the soul of Noma’s cooking: well-crafted, plant-forward, and always focused on great flavors. This umami-rich sauce will help elevate your home cooking and pave the way for more delicious meals. Noma’s smoked mushroom garum is a plant-based liquid seasoning full of earthy, fruity flavors and a ton of umami. How is it made? Well, apparently the team crushes organic mushrooms with salt and rice koji and lets it brew for 6 to 8 weeks before cold smoking and bottling this special distillate.
Smoked Mushroom Garum is packed with flavor, contains one 250mL (8.45oz) bottle, is made by hand by the Noma fermentation lab team in Copenhagen, is vegan, soy, gluten and dairy-free
